One of my guilty pleasures for takeout is Pizza but there isn’t a place that sells low carb pizza or low carb pizza crusts where I live , so when I am craving pizza , this is a great go to! This Keto friendly , cauliflower pizza crust is gobbled up by even the pickiest of eaters in my house.
Making a stockpile doesn’t really require a whole lot of effort. What I typically do when cauliflower is on sale , is prep it an divide it into 3 cup ziploc bags. It is considerably less expensive than buying the pre-made cauliflower “rice” and can be done quickly with my Ninja Blender.
- 3 cups riced, cooked cauliflower
- 3 eggs
- 1 1/2 cups mozzarella
- 1 1/2 cups parmesan
- 3 tbsp almond flour
- 2 tbsp italian seasoning
- 1 1/2 tsp sea salt
I have these perfect little bowls that hold 3 cups and have a lid with a vent hole that you can uncover and it works perfectly for cooking the riced cauliflower. I microwave it for 4 mins and then let it cool off before transferring to some cheesecloth to squeeze all of the excess liquid from it. ( The more liquid you remove, the firmer the crust will be)
Bake for 10-12 mins in a pre-heated 450 oven until golden brown. I have used a silicone baking mat but parchment paper or a pizza stone would work as well.
With this recipe you will be able to make 2 medium sized round pizzas or 1 large rectangular pizza.
At this point, anything you add and the amounts are just personal preference.
I always sprinkle a little cheese on top of the sauce to help the toppings stick to the pizza.
There are endless combinations you can make with this , load up your favorite toppings or try something new. With this pizza, I loaded it up with fresh mushrooms, onions, peppers , cheddar cheese, mozzarella cheese and St. Albert’s Cheese Curd ( Best Cheese curd EVER!) I have started to buy low carb pizza sauce in bulk and freeze in in 1 cup portions.
I also purchased a couple restaurant style squeeze bottles that hold 2 cups of sauce perfectly. It is really handy this way and allows us to have sauce readily available for whenever we need it. We make several different types of pizza meals , crustless pan pizzas , pizza casseroles , etc.
You can also make tasty low carb cheese sticks from this recipe. Just brush with some melted garlic butter and top with cheese.
Once you have all your desired toppings added to the cauliflower crust, toss it back in the oven for 7-10 mins until golden brown and bubbly.
Let cool for 3-5 mins , slice and serve!
